With 13 years of culinary experience, Jacob is bringing the best of both worlds together; luxurious restaurant quality food combined with the intimacy of a private location.

Jacob created and executed a delicious and beautifully presented lunch for 14 people. Super responsive, flexible and accommodating with regards to menu planning, it was far better than going to any restaurant! We could not have asked for anything more – it was beyond our expectations. A joy to have in our home, our guests were blown away (and he left our kitchen spotless!).

Born to be a chef

Some people are born to cook. Chef Dearie is no different. “I was born a chef” he shared as he reflected on his childhood years. He grew up in the kitchens and dining rooms of the various restaurants, pubs and hotels his parents owned and operated in England. With his father being a chef himself, he was able to explore ingredients and his culinary creativityigniting what would later become a lifelong love of cooking. “I lived above the restaurant growing up and I’ve known from 11 years old that I wanted to be a chef”. At the age of 15, he left school and was given the opportunity of a lifetime to work as a Stagiaire at the Virgin Limited Edition property in Morocco. Shortly after that, still at the tender age of 15, Jacob’s career kicked off when he advanced to the position of Apprentice Chef at the Belmond Le Manoir aux Quat’ Saisons in Oxford, England. It is a two Michelin starred restaurant created by Chef Raymond Blanc that served up to 200 guests per day. While there, he worked across the various sections in the kitchen, successfully completing the apprenticeship.

He learned classic French cooking techniques, food presentation, farm-to-table concepts, time management skills and developed a strong work ethic. On his 16th birthday, while many teenagers would be out celebrating, Jacob spent his special day in the kitchen, doing what he loves most. With his unwavering dedication to his craft, Jacob continued to climb up the culinary career ladder, working his way up from humble beginnings as Apprentice Chef to Head Chef at Moskito Island in the Virgin Islands. While he is formally trained in French fine dining, Jacob enjoys cooking a wide range of different cuisines. He is particularly passionate about showcasing the fine flavours of the Virgin Islands. It is this love of local food coupled with his vast knowledge and experience in the culinary industry that laid out the roadmap for his transition into entrepreneurship.

Bringing the kitchen to you

In September 2021, Jacob officially launched Dearie Catering, his own private luxury catering company with an aim to elevate the culinary scene in the Virgin Islands. He offers creative and unique dining experiences, positioning private dining as the latest luxury. Finding inspiration from his travels throughout Europe, South America, Asia and other parts of the world, Jacob can cook a wide variety of different cuisines. With all that he creates, he adds a touch of luxury to each meal by incorporating fresh, seasonal ingredients sourced from local farmers and suppliers. “I am passionate about showcasing what the BVI has to offer and the potential of our local produce and seafood,” he told us. Not only does he employ a farm-to-table approach with his cooking, he also believes in eating well while fine dining. “I believe fine dining can not only be tasty but good for you as well.”That’s why he uses more modern techniques in the kitchen. For instance, he doesn’t rely on heavy classical butters and creams. Instead, he creates sauces that are lighter and healthier and yet are still delicious. Regardless of what he’s cooking, the ingredients, the technique and flavours all come together in perfect harmony to create an unforgettable dish. All menus will be carefully created to suit the preferences and dietary requirements of each group.

In-villa catering

Book private chef services for one meal, an entire stay, or any variation in between. From casual family-style Caribbean BBQ to a formal five course fine dining meal, Jacob can cater to a variety of different cuisines and styles.

Floating sushi bar

Enjoy a variety of fresh sushi served from a floating kayak in the pool. This option is perfect for guests who want something a little different than a sit-down meal. The kayak, sushi supplies and of course, cold sake is all included in the experience.

Canapé party

A wide variety of canapés are served while guests mingle and chat – a great option for larger groups or corporate events. A chef’s table can be set up so guests can watch as the canapés are being prepared. As the menu starts off with savoury bites and finishes with sweet treats, there is sure to be something for all appetites.

Private events

From weddings to corporate parties, Jacob and his network of chefs and kitchen assistants can cater to large events. Food can be served from a buffet station, family-style down the middle of the table, or plated for each guest – whichever option you choose, you and your guests are in safe hands.
